Scandinavia has become a top destination for food lovers around the world. The reason lies in the New Nordic Cuisine, a movement that celebrates pure, local ingredients prepared through sustainable methods. This cuisine draws heavily on the pristine Scandinavian environment, known for its clean air, unpolluted waters, and rich natural resources. For travelers passionate about food, Scandinavia offers a unique experience where menus change with the seasons and every dish tells a story of nature and tradition.

This blog post shares an exciting two-week itinerary I designed for a couple from New York City who are devoted to culinary exploration. Their trip focuses on Michelin-starred restaurants and other top-rated dining spots in Stockholm and Copenhagen. Securing reservations at even one or two of these acclaimed restaurants is a challenge, but thanks to careful planning and my strong connections with my preferred Nordic supplier, they will dine at eight Michelin-starred venues and enjoy several unique food experiences. Here’s a closer look at what makes this journey unforgettable.

Understanding New Nordic Cuisine

New Nordic Cuisine is more than just a style of cooking. It is a philosophy that emphasizes:

  • Local and seasonal ingredients: Chefs source produce, fish, and game from nearby forests, farms, and waters.

  • Sustainability: Ethical farming, foraging, and ancient preservation techniques like pickling and smoking are central.

  • Simplicity and purity: The focus is on letting natural flavors shine without heavy sauces or artificial additives.

  • Connection to nature: Menus reflect the changing seasons and the unique Scandinavian environment.

This approach has transformed the Nordic food scene, earning international acclaim and inspiring chefs worldwide.

Stockholm’s Michelin-Starred Highlights

Ekstedt

Ekstedt is a one-Michelin-starred restaurant that stands out for its primal cooking style. Founded by Swedish chef Niklas Ekstedt in 2011, the kitchen uses no gas burners, induction tops, or electricity. Instead, every dish is cooked over open flames, wood-fired ovens, fire pits, and wood smoke. This method brings out deep, smoky flavors and connects diners to ancient Scandinavian culinary traditions.

The menu changes with the seasons, featuring wild herbs, fresh fish, and game. Diners can expect dishes like smoked reindeer, charred root vegetables, and freshly foraged mushrooms. The experience is both rustic and refined, offering a taste of Nordic heritage through fire and smoke.

Aira

Located on Stockholm’s scenic waterfront, Aira holds two Michelin stars. The restaurant is co-owned by chefs Tommy Myllymäki and Pi Le, who blend seasonal Nordic ingredients with global spices and cooking techniques. The striking building, designed by Jonas Bohlin, resembles a modern boat garage, creating a unique atmosphere that complements the innovative cuisine.

Aira’s menu features creative dishes that balance tradition and modernity. Expect fresh seafood, wild herbs, and unexpected flavor combinations inspired by Asian and European influences. The presentation is elegant, and the setting offers beautiful views of the water, making it a perfect spot for a memorable dinner.

Brasserie Astoria

For lunch, Brasserie Astoria offers a vibrant and elegant dining experience inside a beautifully restored 1870s Victorian cinema. Part of the Frantzén Group, this restaurant is led by a chef with three Michelin stars, ensuring top-quality food and service.

The menu focuses on classic brasserie dishes with a Nordic twist, using local ingredients and traditional techniques. The atmosphere is lively yet sophisticated, making it an ideal place to enjoy a midday meal before exploring Stockholm’s cultural sights.

Copenhagen’s Culinary Gems

While the itinerary focuses heavily on Stockholm, Copenhagen also plays a key role in this Nordic food adventure. The Danish capital is famous for its innovative restaurants that embrace New Nordic Cuisine principles. The couple will visit several Michelin-starred venues here, each offering a distinct take on Nordic flavors.

Some highlights include:

  • Noma (if available): Often called the birthplace of New Nordic Cuisine, Noma has revolutionized how chefs approach local ingredients.

  • Geranium: Known for its artistic plating and multi-sensory dining experience.

  • Kadeau: Celebrates Bornholm island’s ingredients with bold, rustic dishes.

These restaurants emphasize seasonality, sustainability, and creativity, providing a perfect complement to the Stockholm dining experiences.

Unique Food Experiences Beyond Michelin Stars

In addition to the Michelin-starred meals, the itinerary includes special food experiences that showcase Scandinavian culture:

  • Foraging tours: Guided walks in forests and along coastlines to gather wild herbs, berries, and mushrooms.

  • Traditional pickling workshops: Learning ancient preservation methods that have shaped Nordic cuisine.

  • Local markets visits: Exploring vibrant markets to taste fresh seafood, artisanal cheeses, and baked goods.

  • Craft brewery tours: Sampling Nordic craft beers that pair perfectly with local dishes.

  • VIP Gastronomic Ride with Rickshaw: a gastronomic cycling tour offering groups of 8 a unique way to experience Copenhagen's culinary scene with the full attention of a "Bicycle Chef"

These activities deepen the connection to the region’s food heritage and offer hands-on learning opportunities.

No trip to Scandinavia would be complete without a stay in the beautiful countryside. This couple will be staying in the unique, avant garde accommodations of the Tree Hotel in the middle of a Swedish forest located just south of the Arctic Circle. Then they will stay at the Arctic Bath Hotel in Swedish Lapland. This architectural marvel centers around an open air plunge pool. They will be enjoying a complete Scandinavian wellness experience and an excursion with Sapmi reindeer. The last countryside experience will be at Falsled Kro an historic inn dating from the 16th century, located along the Danish coast, now part of the Relais and Chateaux collection.

Practical Tips for Foodies Traveling in Scandinavia

  • Book early: Michelin-starred restaurants in Stockholm and Copenhagen fill up months in advance.

  • Be flexible with menus: Many places offer seasonal tasting menus that change daily.

  • Try local specialties: Don’t miss dishes like gravlax, smoked fish, rye bread, and cloudberries.

  • Dress smart casual: Most fine dining venues have a relaxed but polished dress code.

  • Learn basic phrases: A few words in Swedish or Danish can enhance your dining experience.
